Recipe Story
I have friends who have cystic fibrosis. I know they need to eat high-calorie foods to maintain a healthy weight. "Bibingka" is one of my favorite desserts that my mom would make for me as I was growing up. I loved it because of its chewy texture and buttery taste. I especially liked the crispy crust from the pieces of cake that baked along the edges of the pan. To me, it tastes best homemade and it's worth every calorie.
Ingredients
- 1 lb rice flour (mochiko)
- 1 1/2 c coconut milk
- 2 1/2 c milk
- 2 c sugar
- 1 stick(s) butter
- 3 Tbsp baking powder
- Add All Ingredients
Directions
Mix all ingredients.
Grease and pour mixture into 13x9 rectangular glass pan.
Bake at 350 degrees for 1 hour.
