Our Favorite Baked Salmon By: Ann R.
Recipe Story
Our son with CF loved this fish so we had it at least once per week. Since our CF son is now 37 years old and doing well, we credit his good health to eating lots of fish, vegetables and fruit.
Ingredients
- 1 1/2 lb wild filet of salmon
- 3/4 c clam juice
- 1/2 c lemon juice
- 1 Tbsp cold unsalted butter
- 2 Tbsp capers, drained
- 1/2 c chopped green onion tops
- 1 tsp paprika
- Add All Ingredients
Directions
- Prep Time: 20 minutes
- Cook Time: Bake time: 20 - 25 minutes, depending on thickness
Preheat oven to 350 degrees.
Wash salmon and put it in a Pyrex dish, skin side down.
Pour clam juice over entire fish.
Pour lemon juice over entire fish.
Cut thin pats of cold butter and spread over fish.
Sprinkle capers, green onion tops and paprika over entire fish.
Place uncovered pan in oven and bake for 20-25 minutes, depending on thickness of fish.
