Cheese Lasagna

My daughter was diagnosed with CF at 2 1/2 weeks old. This came as quite a shock to our family since early in our marriage and prior to getting pregnant we were tested and I was told that I was a carrier for CF and my husband's test showed that he was not a carrier for CF. However, as we later found out, my husband was in fact a carrier of CF too, but not one of the mutations that he was tested for initially. Neither of us knew of anyone in our families that had CF, and we also have a son 16 1/2 months older than our daughter that fortunately does not have CF. Our daughter is now 3 years old and is a beautiful, spunky and healthy little girl. This lasagna recipe is very tasty, for both young and old. It also is high in calories, and can be made even higher in calories.

Ingredients

  • 15 oz ricotta
  • 4 c mozzarella, shredded
  • 1/2 c parmesan, grated
  • 2 eggs, slightly beaten
  • 25 oz marinara sauce
  • 1 pkg lasagna noodles prepared following package directions

Instructions

Step 1
Mix all of the ricotta cheese, mozzarella cheese, and parmesan cheese with the eggs in a large mixing bowl.

Step 2
Spray 13x9 baking dish with cooking spray.

Step 3
Place 3 to 4 lasagna noodles over bottom of pan, slightly overlapping.

Step 4
Spread 1/3 of the cheese and egg mixture over the noodles and then cover with 1/3 of the marinara sauce.

Step 5
Place 3 to 4 lasagna noodles and remaining marinara sauce. Cover with remaining 1/3 of cheese and egg mixture.

Step 6
Cover pan with foil and bake in preheated 350 degree oven for 30 minutes.

Step 7
Remove the foil from the pan and bake for another 10 minutes.

Step 8
Let stand for 10 minutes before serving.
