Recipe Story
My friend gave me this recipe when we started eating gluten-free and reduced-dairy foods earlier this year. My daughter has CF and is 12 years old. Switching to a gluten-free diet has helped significantly with her GI issues and discomfort. I am always on the lookout for easy and healthy gluten-free and no-dairy recipes and this is one that I use often. This is a recipe that can be easily changed such as using pumpkin instead of applesauce. Add in chocolate chips or a little cocoa powder and you have a chocolate muffin.
Ingredients
- 1 c almond flour
- 1/2 c applesauce
- 2 eggs
- 1/3 c maple syrup
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 2 tsp cinnamon
- 1/2 c chopped nuts (optional)
- Add All Ingredients
Directions
Mix all the ingredients together in a bowl.
Put into lined or greased muffin tins.
Bake at 350 degrees for 15 minutes.
Rest for 15 minutes before removing from pan.
