Something Special Mashed Potatoes By: Jodi B.
Recipe Story
My son has CF, and mashed potatoes with brown gravy are one of his favorites. My mom used to make something similar, and I upped the calories by not using light sour cream or neufchatel cream cheese and gave it more flavor with the onion powder. It gives him the extra fat and calories he needs.
Ingredients
- 5 lb Idaho potatoes
- 3 Tbsp butter
- 8 oz sour cream
- 8 oz cream cheese
- 1 1/2 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp black or white ground pepper
- Add All Ingredients
Directions
Peel potatoes and cut into smaller pieces.
Place in a 4 qt. kettle and cover with water.
Bring to a boil.
Reduce heat to med. high and cook until very done.
Drain.
Preheat oven to 350 degrees.
Mash potatoes with 2 tbsp butter and remaining ingredients.
Beat with electric mixer until smooth.
Spoon mixture into a 2 qt. casserole dish and dot with remaining butter.
Bake 20 minutes.
